My family loves rice in the past though it was normally white rice that we were cooking and then one day I was out shopping and decided to buy some Wild Rice. Lets just say the first time I cooked it it did not turn out so well. My husband and kids did not like it, so clearly I either had to find a recipe or go back to the white rice. Which I was too stubborn to do so clearly I had to find a recipe ;-)
I had picked up The Biggest Loser Club 30 Day Jump Start from our local library and inside of it there is a great Wild Rice recipe that I decided to try and I am happy to say my family loves it! I have made this a few times now and every time comes out with perfect texture! I definitely recommend checking out this one!
Wild Rice With Toasted Almonds
1tsp Olive Oil1 Cup wild rice, rinsed and drained1/2 cup sliced mushrooms1/2 cup chopped yellow onion2 tablespoons chopped almonds1 tablespoon minced garlic2 teaspoons chopped fresh thyme or 1 teaspoon dried2 cups fat-free,, low sodium chicken broth or vegtable1/2 cup water
Preheat oven to 375F. In a large nonstick skillet, heat the olive oil over medium heat. Add the rice, mushrooms, onion, almonds, garlic, and thyme. Cook for about 5 minutes, stirring constantly, until the mixture is fragrant and the onions are just starting to soften. Don't allow the nuts or garlic to brown. Transfer the mixture to a 2-quart baking dish. Bring the broth and water to a boil and pour it over the rice mixture in the baking dish. Cover with foil and bake for 1 hour.
Makes 6 (1cup) servings
Per serving 140 Calories, 6 g Protein, 26g carbs (2g sugars), 3g fat (0g saturated), 0mg cholesterol, 3g fiber, 160mg sodium.
