Tasty Tuesday!

My family loves chicken and I am always looking at new ways to add it into our meal plan.  I know some people are happy with having similar meals within the week/month.  I can honestly say I am not one of those people.  That is one of my biggest problems with trying to loose weight.  Some can eat salads every single day for lunch for example.  I can do that for a certain time and then I find my mind starts sabotage my efforts and then the next day I eat a whole cheesecake.  Well maybe not a whole cheesecake Ha Ha, but know I would have wanted to :-)

Today's recipe is a Chicken Meatloaf and here is what you will need and it is so easy to make that it is a perfect recipe to involve the kids with!  As it shows when children help with meal preparation they are more likely to eat the food!



Zesty Chicken Meatloaf

1 pound ground chicken
2 eggs
1 1/2 cups bread crumbs
3 tablespoons salsa
2 tablespoons Ranch-style salad dressing
1 (1.25 ounce) package taco seasoning mix
1/2 cup shredded Cheddar cheese
sour cream (optional)

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x4 inch loaf pan.
  2. In a large bowl, mix together the ground chicken, eggs, bread crumbs, salsa, salad dressing, and taco seasoning mix. Pack into the prepared loaf pan.
  3. Bake for 1 hour in the preheated oven. Top with cheese, and serve with sour cream.
